Black Mustard seeds have been around since almost 5,000 years. Black mustard seeds are tiny little strong flavored seeds most commonly used in Indian cooking. Sprouted Dew (Moth) Beans Recipe
What you need:
2 Cups Dew/Moth Beans,4 Tblspn Vegetable Oil,1 Pinch Asafoetida Powder,3 Dried Red Chillies, ½Tspn Black Mustard Seeds,6 Garlic Cloves, 1Red Onion,1 Tomato,2 Pinches Dried Fenugreek Leaves,1 Tspn Dried Cilantro, 2 Tspn Ground Turmeric,1 Tspn Cayenne Pepper,1Tspn Ground Cumin, 2 Tspns Ground Coriander,1Jaggery Cube,½Parts Lime Juice,Salt
In a pot over medium heat,add oil. As the oil heats up add asafoetida, black mustard seeds, dried red chilies & garlic cloves. As mustard seeds crackle, add onion & sauté until its golden brown.Then add tomato, dried fenugreek leaves & dried cilantro. Sauté for about 5 mins.
Now add the dew beans. Stir evenly for about 2-3 mins. Then add ground turmeric, cayenne pepper, ground coriander & ground cumin. Mix evenly, in about 5 mins add jaggery.
Squeeze half a lime into the mix. Stir from time to time.Now add 2 cups of water & let the beans cook. Should be done in about 15-20 mins.Add salt to taste.
Enjoy with hot wheat tortillas.
Cinnamon Red Lentils Recipe
What you need:
1 cup Red Lentils,1 tbs. crushed garlic,1 tsp. curry powder,1/4 tsp. black mustard seeds,1 onion chopped,1 chopped tomato,1/2 tsp. turmeric,1 Ceylon Cinnamon stick,1 lbs spinach,1 tbs. olive oil
First wash the spinach. Make sure you wash it well. Wash the red lentils until the the cloudy residue is no longer there.
Assemble all the ingredients. Now add a tablspn of Olive oil and Black Mustard seeds into a pan & heat on medium until the mustard seeds start to pop. About 5 minutes.
Then add the Ceylon Cinnamon stick, onions, garlic, turmeric and curry powder. Sauté the onions and spices for about seven minutes on medium heat. Only mild full flavor Ceylon Cinnamon works for this recipe.
Add the lentil, 3 cups of water & chopped tomato and cook for about 20 mins. Add salt to taste after 20 mins. The lentils should be cooked into a soft consistency. Add more water if necessary. Add chopped Spinach & cook for another 10 mins.
Serve with rice & some stir fried beef!
Potato Eggplant Fry Recipe
What you need:
2 medium sizes potatos, 5 small Eggplant sliced, ½Large onion chopped,1Large tomato chopped, ¼Tsp black mustard seeds,¼Tsp cumin seeds, ¼Turmeric powder, ¼Red chilli powder or paprika, ¼Tsp coriander powder ( optional), 2Green chillies sliced into half, 1 Inch ginger finely chopped,2Tbsp oil, Salt to taste
Cut potatoes in one inch cubes & eggplant in long slices and put it in salt water. Potatoes and eggplant won’t turn black.
Heat oil in a pan add mustard seeds when they start to splutter add cumin seeds green chilli onions and let them soften.Then add potato and eggplant and mix it well cover with a lid and let it cook on a low flame for 5 mins.Mix this slowly without breaking the vegetables, add tomatoes, chilli powder, turmeric, coriander powder and mix . Now cover and cook for another 3-5 mins till these are done.
Serve it with hot wheat tortillas.Enjoy!!!
